Healthy Fall Recipe: 3 Ingredient Pumpkin PB Energy Balls

For the final fall recipe I had planned to share, I originally teased a pumpkin pie-inspired recipe in my newsletter. My first idea was to perfect a pumpkin pie greek yogurt recipe, but after playing around with it, I felt like it wasn't quite unique enough.

I was still on a mission to create something on the sweeter side that was simple to put together without needing a long list of ingredients.

And if you're not a fan of pumpkin spice, you're in luck! These energy balls don't have that traditional pumpkin spice flavor.

I actually came up with this recipe on a whim. To be honest, I thought the combination was a little too out there and probably wouldn't work. I was fully expecting to try it, decide it tasted terrible, and move on to something else.

Turns out, I was VERY wrong!

With that, I give you my 3 Ingredient Pumpkin PB Energy Balls. They're made with powdered peanut butter, pumpkin puree, and honey. That's it! They're easy to mix together, have a naturally sweet peanut butter flavor, and are a fun way to use up a little leftover canned pumpkin.

3 Ingredient Pumpkin PB Energy Balls

Servings: 1 small batch

Ingredients

  • 30 grams PBfit or PB2 powdered peanut butter (approximately ¼ cup, depending on the brand)
  • 30 grams canned pumpkin puree (approximately 2 tablespoons; use plain pumpkin, not pumpkin pie filling)
  • 10 grams honey (approximately 1½ teaspoons)
  • Optional: A sprinkle of salt or other adds as noted below.

Instructions

  1. Mix the ingredients. Add the powdered peanut butter, pumpkin puree, and honey to a small bowl. Stir until everything is well combined and a dough-like mixture forms.
  2. Adjust the consistency if needed. If the mixture feels too wet to shape, add a little more powdered peanut butter. If it's too dry, add a small amount of pumpkin puree.
  3. Form into balls. Divide the mixture and roll it into small balls using your hands.
  4. Chill and enjoy. Place the energy balls in an airtight container and refrigerate until ready to eat.

That's it! Three simple ingredients, very little prep, and no baking required.

Recipe Notes

Remember the 3:3:1 ratio. The beauty of this recipe is that you don't have to follow the exact measurements above. Think of it as a 3:3:1 ratio by weight: three parts powdered peanut butter, three parts pumpkin puree, and one part honey. You can easily make a smaller or larger batch depending on how much pumpkin you have left. Just adjust the consistency as needed, since different brands can vary.

Make sure you use pumpkin puree, not pumpkin pie filling. Pumpkin puree contains just pumpkin, while pumpkin pie filling typically includes added sugar and spices. For this recipe, you want plain canned pumpkin.

Adjust the texture as needed. If your mixture is too sticky to roll, add a little more powdered peanut butter until it holds together. If it's too dry, add a small amount of pumpkin puree.

Want to change up the flavor? I love adding the sprinkle of salt to bring out the peanut butter flavor. I think these would be delicious with a few mini chocolate chips or toffee bits mixed in. Keep in mind that additions will change the nutrition information.

Store them in the refrigerator. Because these energy balls contain pumpkin puree and aren't baked, keep them in an airtight container in the refrigerator and enjoy them within a few days.
