This salad is crisp, flavorful, and perfect for fall. Sweet honey crisp apples, salty feta, crunchy pumpkin seeds, and tangy maple Dijon yogurt dressing come together over fresh spring mix for a quick meal that’s satisfying and nourishing. I love it because it's so tasty and the Maple Honey Dijon Dressing is so simple while still being healthy!

Ingredients

For the salad:

  • Spring mix (a couple big handfuls )
  • Honey crisp apple, chopped (I used about half a large one)
  • Feta cheese (1 serving is plenty for flavor)
  • Red onion, thinly sliced
  • Pumpkin seeds (around a tablespoon is plenty)
  • Protein of choice (grilled chicken, salmon, chickpeas, etc.)

For the dressing:

  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • 1 tbsp plain nonfat Greek yogurt
  • Salt, pepper, and garlic powder to taste

👉 This makes a generous portion of dressing — you can also just mix equal parts mustard, syrup, and yogurt.

Instructions

  1. Chop apple, thinly slice onion, and prepare your protein of choice.
  2. Whisk together Dijon mustard, maple syrup, and Greek yogurt. Season with salt, pepper, and garlic powder to taste.
  3. Toss spring mix with apple, red onion, pumpkin seeds, feta, and protein. Drizzle with dressing and serve immediately.

Prep Ahead Tip

You can meal-prep this salad in a layered container so it stays fresh:

  • Start with dressing on the bottom of the bowl/jar.
  • Add red onion, chopped apple (tossed in a little lemon juice to reduce browning), pumpkin seeds, and feta.
  • Layer your protein of choice next.
  • Finish with spring mix on top.

When ready to eat, toss everything together for a crisp, flavorful salad.
